  • 1/3 cup (67g) packed light brown sugar

  • 1 teaspoon cinnamon

  • 1/4 cup (4Tbsp; 56g) unsalted butter, melted

  • 2/3 cup (84g) all-purpose flour



For the Muffin Batter:


  • 1 cup (227g) of canned pumpkin puree (make sure it's not pumpkin pie filling)

  • 1/2 cup of granulated sugar

  • 1/2 cup of coconut sugar or brown sugar, packed (i like coconut sugar to lower the refined sugar content)

  • 1/2 cup (120ml) avocado oil (or melted cocnut oil)

  • 2 large eggs

  • 1 teaspoon of vanilla extract

  • 1 3/4 cups (219g) of all-purpose flour

  • 1 teaspoon of baking powder

  • 1 teaspoon of baking soda

  • 2 teaspoon ground cinnamon

  • 1 teaspoons of pumpkin pie spice

  • 1/2 teaspoon of salt


For the Cream Cheese Filling:


  • 8 oz of cream cheese, softened

  • 2 tablespoons of sugar

  • 1 egg yolk

  • 1/2 teaspoon of vanilla extract

Step 1: Preheat the Oven


Start by preheating your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly to prevent sticking.


Step 2: Prepare the Cream Cheese Filling


In a medium bowl, combine the softened cream cheese, sugar, add in egg yolk and vanilla extract. Beat until smooth and creamy. Place this delicious mixture in the refrigerator as you prepare the muffin batter.


Step 3: make your crumb topping


In a small bowl add your cinnamon and sugar, next pour your melted butter on top, stir it all together, then add the flour, with a fork mix it togther until it resembles a crumbly topping. set aside


Step 4: Make the Muffin Batter


In a large mixing bowl, mix together the pumpkin puree, both sugars, oil, eggs, and vanilla extract until the mixture is smooth and well combined.


In another bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add these dry ingredients to the wet mixture, stirring until just combined. Remember, it’s okay if there are a few lumps; overmixing can lead to dense muffins.


Step 4: Assemble the Muffins


Scoop about a tablespoon of muffin batter into each muffin cup to create a base. Add a spoonful of the cream cheese filling in the center of each cup. Then, top off each muffin with another tablespoon of muffin batter, ensuring that the cream cheese filling is completely enclosed. Then top each muffin with the crumb topping.


Step 5: Bake and Cool


Place your muffin tin in the preheated oven and bake for about 18-20 minutes. A toothpick should come out clean when inserted into the muffin (not the filling).
